MOM'S CHINESE CHICKEN SALAD
Mix salad with dressing place all toppings on the salad.

Place chicken breast in a wide pan with a lid add 2 cans of chicken broth or water, 1 scallion chopped in half and a ginger slice (optional) along with enough water or chicken broth to completely cover the chicken by about 1 inch. Over medium heat, without covering the pan, bring the liquid in the pan just to the simmer. With a large spoon, move the breast around to be sure each piece is completely surrounded by liquid. When the liquid just begins to boil cover the pan and immediately turn off the heat. Allow to stand for 45 minutes. Remove chicken from the liquid remove the skin and discard the scallions and ginger. Chop into small pieces or shred meat. Makes for 6-8 people.
