AVOCADO SHRIMP BISQUE
Cut Mayan Pearl Avocados in half. Discard the pits. Spoon into a small bowl and mash. Chop cooked shrimp. In a medium saucepan, combine Mayan Pearl Avocado, chicken broth, whole milk, lemon juice and minced onion. Heat slowly to a boiling, stirring frequently. Add chopped shrimp, along with salt and pepper. Heat through, but DO NOT boil. Remove from heat. Adjust seasonings to taste. May be served hot or cold.
