Cobb Salad with Herb Vinaigrette

Who doesn't love a summer salad? This little number is perfect for a healthy lunch or a satisfying appetizer.

 

Vinaigrette:
-1/4 cup Pacifica Culinaria White Pear Balsamic Vinegar
-3/4 cup Pacifica Culinaria Provencal Herb Avocado Oil
-2 teaspoons Dijon mustard
-Dash of salt and pepper

In a small bowl, whisk together all ingredients.

Salad:
-Romaine, Arugula, Radicchio blend
-Avocado, sliced
-Hard boiled egg
-Red onion, sliced
-Bacon, crumbled

Combine ingredients and drizzle herb vinaigrette over salad.
