Skillet Lemon Chicken

Summer is for lemons. They add a fresh, fragrant flavor to meats and veggies and make everything taste like sunshine.

 

Lemon Chicken:

 

-4 thin-sliced boneless, skinless chicken breasts

-1/3 cup flour

-2 tablespoons Pacifica Culinaria Coastal Lemon Avocado Oil (divided)

-1/4 cup chicken broth

-1/4 cup chopped fresh flat-leaf parsley

-Salt & pepper

Garnish: lemon slices

 

Heat 1 Tbsp. of Avocado Oil in a large skillet over medium-high heat. Place flour in shallow dish and dip both sides of chicken in flour. Cook chicken in skillet 2 to 3 minutes on each side or until golden brown and done. Transfer chicken to a platter and cover to keep warm.

 

Add broth and 1 tbsp. Avocado Oil to skillet, and cook 1 to 2 minutes or until sauce is slightly thickened, stirring to loosen particles from bottom of skillet.

 

Pour sauce over chicken. Garnish with parsley and lemon slices and enjoy!
