As the hustle and bustle of back-to-school season returns, many of us are on the hunt for simple, healthy weeknight meals. Well, look no further! The creamy gorgonzola melts into the caramelized onions and pears while the pear vinegar adds the perfect amount of zest. This sweet and savory dish makes a delicious appetizer as well. We give it an A+!
Pear & Gorgonzola Flatbread:
-2 Bartlett pears, sliced
-1/2 onion, sliced
-1 Tbs Pacifica Culinaria Roasted Garlic Avocado Oil
-1 Tbs Pacifica Culinaria Pear Pomegranate Balsamic Vinegar
-1/4 cup Gorgonzola cheese
-Handful of fresh spinach
Preheat oven to 425. Heat the avocado oil in a pan and add pear and onion. Cook in the pan until caramelized, then mix in balsamic vinegar. Place the flatbread on a cookie sheet and spoon on pear and onion mixture. Sprinkle with Gorgonzola and place a few spinach leaves on top. Bake for approximately 7 minutes or until the crust is golden brown.
