Ham, Thyme and Gouda Stuffed Potatoes
You really can't go wrong with potatoes...they're hearty and filling and make a great dinner. They only get more delicious when stuffed with smoky gouda and savory ham. Pair with a tossed salad and dinner is served!
You'll need...
8 russet potatoes,
2 tbsp. PC Roasted Garlic Avocado Oil
3 shallots, chopped
1lb ham steak, cubed
8oz Gouda cheese, shredded
2 tbsp. butter
1/2 cup milk
2 tbsp. of thyme
salt and pepper to taste
Rub potatoes with oil and pierce several times with a fork. Bake 1 hour or until tender. Let cool and spoon out the inside of the potato into a bowl. Place skins on baking sheet. Preheat broiler.
While potatoes are cooking, heat 1 tablespoon of Garlic Avocado Oil over medium heat. Saute shallots until tender.
Add shallots, ham, cheese, butter, milk, thyme, and salt & pepper to cooked potato in bowl. Mash with fork until combined. Scoop mixture into skins. Broil until golden brown.
