Chicken Fajitas with Homemade Pesto
If you want to spice up your day, this dish is for you! This dinner is healthy, flavorful and sure to please a crowd. The chicken mixture is delicious over rice, in a tortilla or even on a salad.
Ingredients: 16 oz boneless skinless chicken breasts
1 Tbsp Pacifica Culinaria Roasted Chipotle Avocado Oil 1 Tbsp Pacifica Culinaria Key Lime Avocado Oil 1 red bell pepper, cut into strips 1 poblano pepper, cut into strips 1 medium onion, cut into strips 1 tsp ground cumin 1 tsp garlic powder A pinch of Mexican chili powder salt and pepper
For garnish: 1/2 cup shredded Mexican cheese sour cream guacamole
Marinate chicken in Avocado Oils (combined) and season with chile powder, salt, pepper, garlic powder and cumin. Toss vegetables in remaining Avocado Oil mixture. Saute vegetables in a large skillet over medium heat until the onions and peppers are soft. Heat outdoor grill on medium heat; grill chicken until cooked through, about 8 minutes on each side.
Move chicken to cutting board and cut into strips. Combine with the peppers and onions. Top with pesto dressing.
