Savor every last bit of summer with these pan-seared scallops and pasta!
Cayenne Lemon Scallops
-1 lb large scallops, rinse and pat dry
-salt & pepper
-1/2 tsp cayenne pepper
-2 Tbs Coastal Lemon Avocado Oil
Heat oil over medium-high heat. Season scallops with salt, pepper and cayenne pepper. Pan-sear until top and bottom are golden brown. Bring to a light simmer until scallops are cooked through.
Garlic Butter Pasta
-1 lb pasta (cooked)
-1/4 cup Pacifica Culinaria Roasted Garlic Avocado Oil
-2 cloves garlic
-5 Tbs butter
-1 tsp salt
-1/2 tsp freshly ground pepper
-1/2 cup white wine
-1/2 cup chopped flat parsley1/2 cup grated Parmesan cheese
Heat olive oil over medium heat. Add garlic and saute until golden brown. Add salt, pepper, white wine, and butter. Stir and remove from heat. Pour sauce over pasta, then top with parsley and cheese.
