Homemade Basil Pesto & Sundried Tomato Pasta

There is nothing like fresh basil pesto to liven up a simple dish of pasta, chicken or fish. This pesto pasta can be served cold during summertime, or warm if you want a cozy winter dinner!

Basil Pesto -use as a pasta sauce, smear on a sandwich or dip in some veggies! 🌿

2 cups packed fresh basil leaves

2 cloves garlic

1/4 cup pine nuts

2/3 cup Pacifica Culinaria Garlic Olive Oil, divided

Salt & Pepper, to taste

1/2 cup freshly grated Pecorino cheese

Combine the basil, garlic, and pine nuts in a food processor and pulse until chopped. Add 1/2 cup of the oil and process until smooth. Season with salt and pepper.

Add all remaining oil and pulse until smooth. Transfer the pesto to a large serving bowl and mix in cheese.

Pesto Pasta -

Cook pasta according to directions. Mix in pesto and top with sundried tomatoes and green olives.
